I can’t believe January is over already.  I am hoping our crazy snow/ice/cold weather is soon over too.  I woke up this morning with horrible sinus pain.  I don’t want to have any more days off of school, but thank goodness I was home today to be able to rest.  Ok enough about that.

During the week I am very busy teaching during the day and working at the gym at nights, so on the weekends I try to cook meals that can be heated during the week and I also try to bake something for desert for the week.  I had a few ripe bananas in the kitchen so this weekend’s dessert was a Banana Chocolate Chip Cake made by Derek, Molly, and me.  It was FABULOUS!!!  I followed the recipe exactly as it was given.  My suggestion would be to double the recipe because the cake was really flat.  I also put Betty Crocker cream cheese icing on top.  Let me know what you think if you try it!!!
